Asturias = Cheese + Fabada + Cachopos ?
Gastronomy in Asturias is very good and varied. As we’ve mentioned before, the traditional and most loved drink by Asturians is cider, also used in the production of some recipes. There are meat-based dishes, such as cachopo (two large veal fillets with ham and cheese inside) or chorizo a la sidra (chorizo cooked with cider), and stews and hotpots, like fabada (bean stew) and pote asturiano (collard green, potato and meat stew).
Besides, because Asturias is a coastal land, fishes like merluza a la sidra (hake cooked with cider) and seafood like andarica (velvet crab), centollo (spider crab), etc. are very important.
It’s also a region where cheese is very important, and there are many types (afuega’l pitu, los beyos, cabrales, gamoneo, ahumado de Pría…). Cheese is used in the production of some dishes and sauces as well, such as patatas al cabrales and escalopines al cabrales (potatoes and meat fillets, respectively), both cooked with a quite strong blue cheese sauce.
Also, in Asturias there is room for sweet-toothed people, because we have a huge amount of desserts and sweet things. The stars are rice pudding and frixuelos (similar to crepes), and carbayones and casadielles are very good too
